Traditional tandoori ovens are shoulder-high clay pots used for Indian cooking. Modern examples are more compact and have a stainless steel exterior. They still use a ceramic liner that curves inwards towards a central hole in the top.

Tandoori ovens create a high, dry heat that can reach over 1,000 degrees Fahrenheit. This form of heat allows food to develop a crisp outer layer while maintaining a moist interior. All types of foods from meats to bread can be cooked in a tandoor, depending on the chef’s skill level.

Meats like beef, chicken, fish and lamb are traditionally prepared in a tandoori oven. The meat is first skewered on a thin metal blade and lowered into the top hole. It is suspended in the hottest part of the cooking cavity. After a few minutes, the meat is removed and served on a bed of rice and a yogurt- or curry-based sauce.
