The overall dimensions of the merchandiser, especially the width and depth, will indicate how much counter space you need to allot. Countertop units usually only have up to four shelves or display surfaces available. Any more and the cabinet would probably be too big to fit on the countertop. Either way, you will want to consider the number of shelves the unit has because it will help determine the amount of different products you can display at once.

Another feature to consider, one that is not on all cabinets, is humidity control. This feature allows you to introduce moist heat into the cabinet in an effort to increase the product’s shelf life and keep the food from drying out.
