Sandwich shops, salad bars or any other foodservice establishment that prepares salads and sandwiches to order will benefit from having a standard top sandwich/salad table. When selecting a unit you will want to decide if you want doors or drawers for the bottom compartment. Also make sure there is enough clearance on the sides for air circulation.
The choice between doors and drawers depends upon how you want to store your extra ingredients. Most establishments fill several food pans with extra ingredients and place them on shelves inside doored models. But if you have a lot of lettuce or sandwich buns, filling full-size pans with the extra ingredients might and placing them in drawered unit might be a better option.

Whichever type you select, be sure to allow enough space for proper airflow wherever there are vents. The vents are there to help cool the compressor motor, so blocking them can lead to costly equipment repairs if the compressor ceases to work. One way around the side clearance issue is to look for models that have vents in the front.
