Sandwich shops, salad bars or any other foodservice establishment that prepares salads and sandwiches to order will benefit from having a sandwich and salad prep table. When selecting a unit you will need to choose between doors, drawers or a combination of the two for the bottom storage compartments. The choice between doors and drawers depends upon how you want to store your extra ingredients. You could fill several food pans with extra ingredients and place them on shelves inside models featuring doors. But if you have a lot of lettuce or sandwich rolls, filling full-size pans with the extra ingredients and placing them in a unit with drawers might be a better option.
Whichever type you select, be sure to allow enough space for proper airflow around the unit and especially through the vents to the compressor. The vents are there to help cool the compressor motor, so blocking them can lead to costly equipment repairs if the compressor ceases to work, not to mention lost product and revenue. One way around the side clearance issue is to look for models that have vents in the front, referred to as "front-breathing" prep tables.
