All health departments require a certain number of sinks be present in your establishment for employee hand washing. Large sinks with or without drain boards and one to four compartments are available that satisfy manual warewashing and food preparation needs. There are also special sprayers available for pre-rinsing dirt dishes or hosing off fruits and vegetables, too. Faucets and drains are important components to sink operation and often are not included. You can even buy special aerators to help decrease the water and money you waste.
