Raclette is ideal made during the summer and fall months when the cow milk is naturally higher in butterfat. If prepared properly, the cheese should have a dark beige color with a creamy, non-granular texture. It should have a mild, slightly nutty flavor, but it can also be smoked or seasoned with herbs, white wine or pepper. The cheese is usually aged at least three months and is sold in large rounds. However, the entire round will not fit onto the raclette machine. It will usually have to be cut in half before it will fit under the warmer.
