The only difference between an outdoor charbroiler and a regular grill is simply what you grew up calling it. Both units utilize gas-fired heat to grill food items. They can both be used with or without a lid as well. Cooking without the lid will be a slower, more traditional grilling process. Closing the lid will create a type of oven that cooks food faster. Outdoor charbroilers usually do not come with a cover. You will need to determine whether you want to do open grilling or have the lid closed. You will also want to consider the overall width of the unit because it will indicate how much space the unit will need. The width will also indicate how many burners there are. Usually there is one burner for every 8 to 10 inches. Each burner is controlled separately, so you can have only a couple of burners going during slow periods, or fire them all up at once to stay ahead of the rush.
