Open burner restaurant ranges can be powered by gas or electricity. Electrically powered models have different voltages and phases available to suit a specific restaurant’s requirements. Those that prefer to cook with gas should double check the gas inlet size to make sure it matches or is easily adjustable to fit the main supply line.

The range base can be either a storage cabinet or oven. The ovens can heat using standard radiant heat or convection technology. Convection technology tends to be more efficient because a fan moves air through the cavity and decreases cooking. Longer models have space for two compartments, so a combination of options are available.
