Restaurants that require a gas open burner range will want to check the gas inlet size to make sure it is compatible with their supply line. Electric units are available with different voltages to match what each restaurant has available. Regardless of which power type is selected, the operator will want to regularly clean the burner grates and top in order to reduce the fire hazard that comes with exposed burners.
The number of burners is another consideration to factor in when selecting a range. Since only one pot or pan can be placed on one burner at a time, each restaurant has to assess its individual needs and available space. Generally, there are two open burners per every 12 inches of top space, so a 36” model will have six burners, a 48” will have eight burners and so on. There are a few units with extra large burners, however. On these models, there are two burners every 18 inches.
