One compartment sinks come with zero to two drain boards. A model with two drain boards is ideal for food preparation tasks because it gives workers a place to set clean and dirty food product. No of the single-bowl sinks come with a faucet, but faucet mounting holes are already cut in either the backsplash or sink deck. Sinks with splash-mounted holes are ideal when the water lines are coming through or run along the back wall. Deck-mounted holes are ideal when the water supply comes through the floor.
A one compartment sink can be used as a mop sink or a prep sink. One sink cannot be used for both tasks. Since dirty, chemical laden mop water are dumped down a mop sink, using it to then clean and prepare food invites the risk of food contamination. In fact, most health departments require a restaurant to keep the cleaning chemicals and supplies in their own closet or area, away from any food storage or preparation areas.
