The number is usually based on the square footage of the kitchen and prep area or by the number of employees you will have. Basically, there needs to be enough hand sinks in each area of the kitchen for employees to frequently wash their hands and maintain a sanitary kitchen.
Beyond the number and location of you hand sinks, the type you choose is up to you. You can have ones that are freestanding, attach to the wall or drop into a countertop cutout. For each type you will want to check and see if the faucet is included because it is not always the case.
