It may seem to be somewhat of a shock to see wood grilling planks on a site that specializes in equipment and supplies for the commercial kitchen, but they do serve a purpose in the kitchen. Cooking planks are designed for adding a smoky, wood flavor to foods that are being cooked over an open flame. Since these grilling planks are made of cedar or other hard woods, they add a smoky flavor to whatever you put on top. Not only does the cedar flavor the wood, it creates a wonderful aroma in the air that is sure to entice your customers to order whatever you have cooking on that wood. Create smoked salmon dishes or add a unique flavor to your chicken or fish.
Soak these wooden planks for three to four hours before you cook with them. This will prevent the planks from burning over the open flame. Instead, the wood will smolder and add a smoky flavor to the dish. Use the planks for grilling or charbroiling over an open flame. The flames will lick the wood and it will smoke slowly. These planks are for one-time use only. When your food is finished cooking, transfer it from the plank to a serving dish and throw out the wood. Use a fresh plank for the next dish.
