Griddle top ranges can be either gas or electrically powered. The power source you use depends primarily on your local utility costs and current hookup. If replacing a unit or putting it an existing cook line, using the same power as all of the other implements makes sense. For gas-powered units, you will want to check the inlet size to make sure it matches or can be regulated via the existing supply line. For electrical models, different voltages and phases are available to suit any restaurant’s specific needs.
The base of griddle top ranges can have either an oven or storage cabinet. The oven can use standard radiant heat or convection technology to cook the food. Convection technology is more efficient than standard options because a fan moves the air around, decreasing cooking time. But if you do not intend to do any baking, you can forego the ovens in favor of some extra storage space.
