You will want to consider the oil capacity of each filter and make sure it can hold at least as much as an individual fry vat. The oil is drained out of the vats, through a special filter paper and into the filter tank. It is then pumped back into the fry pot for continued use.
In a heavy use environment, oil should be filtered at least once a day, it is likely that you will need to filter more often than just once per day. If the oil is properly filtered and frying temperature is not too hot, fryer oil should last two weeks to 18 days.
