Fresh fish needs to be packed in ice when storing because, unlike meat, fish rots quickly when exposed to the air. Since water is a lot cooler than air, simply putting a fillet in a pan in the cooler is not a cold enough environment to keep the fish fresh, so the ideal method for storing fish fillets is in a cooler, packed in ice. Fish files make storing the seafood easy because each individual drawer comes with a removable pan, so you can load and unload the unit quickly while minimizing the amount of time the fish is exposed to the open, unrefrigerated air.
