Small bakeries and low volume restaurants that need a dough mixer but do not mix a lot of batter every day should consider a countertop model. These units can easily fit onto a counter or stand and have a bowl capacity of up to 20 quarts. The largest floor models can mix several hundred quarts at once. The bowls for these units are so large that workers often need special carts to move them around. Whichever model you decide upon, be sure to verify whether or not mixing heads come with it and that the type is appropriate for your mixing needs.
