Rather than giving customers small individual packets of non-dairy creamer for their coffee, some establishments use the real stuff, the kind that needs to be kept cold and served from a special dispenser. You will want to look at the capacity of the dispenser as well as its overall size to make sure it will work for your establishment.

Cream dispensers can be placed in the front-of-house, for customers to serve themselves, or they can be placed in the kitchen, in which case the server will fill up a small creamer and bring it to the customer’s table. Wherever the unit will be placed, you will want to check the overall dimensions to make sure it will fit in its intended space. The capacity is another important consideration because it will let you judge how often the reservoir will have to be refilled.

To help determine how much cream you need on hand, the individual liquid packets contain about 3/8 ounce of creamer, and most guests that take cream in their coffee will use one or two of these per cup. With this knowledge, you should be able to estimate how many quarts of cream (32 oz in a quart) you need to have readily available.
