Restaurants use countertop warmers both in the front- and back-of-house to keep foods at a safe holding temperature (above 140° F) until they are served. The type of warmer needed depends largely on the food item that needs to be kept warm.
Commercial kitchens that do not need to keep a specific food type but rather need a versatile countertop warmer should select a standard full-size model. There are also portable warmers that have the same diversity but utilize overhead and bottom heat, rather than base heat. Establishments that produce a lot of fired foods for a buffet display will want a warmer specifically designed to maintain proper heat and preserve the food’s crispiness.

Soups, stews and sauces can be kept in either a special kettle or round warmer. Asian, Mexican and other restaurants that produce a lot of rice can use special warmers to keep the rice warm and moist until serving. Finally, operations that make burritos will want a special warmer to heat up the tortilla shells before loading them up with ingredients.
