Countertop display cases are not always plugged in. This means there is a limited amount of time that the internal temperature is maintained. Check the specific details of each product and make sure that it will hold food at safe temperatures for as long as you need it to. If the unit is plugged in and has a compressor, you will want to make sure to give adequate clearance around the air vents in order to kept he compressor cool. Otherwise the motor could burn out and is costly to replace.
