Grilling meats is certainly an art form, and like any other, it requires the proper tools. When grilling outdoors, a simple outdoor barbeque is all you need, but to grill indoors you need a charbroiler, especially if you have limited space, you need a countertop charbroiler like one of these. Charbroilers work by using radiant heat, either from metal radiant plates or lava rocks, to cook meat on cast iron grates. The debate between whether charbroilers that use lava rocks or metal radiant plates are best has raged for many years now and no clear winner has emerged. Charbroilers that use radiants have the advantage of durability, as the radiant plates don’t need to be replaced like the lava rocks do from time to time. They also produce fewer grease flare-ups which can either be a plus or a minus depending on how you look at it. Many chefs like to have frequent flare-ups for display cooking, and many argue they increase the flavor, but they can also be quite dangerous and require a more experienced chef to manage.

Countertop charbroilers that use lava rocks typically have more flare-ups and many chefs also prefer their heat profile and distribution over radiant plates. Ultimately, whether you choose a charbroiler with lava rocks or one with radiants is a personal preference and one that is more in line with what kind of a chef you are rather than what you intend to cook as both methods can cook a wide variety of products. Both varieties also give you the option to use soaked wood chips for smoking. Regardless of which heating method you prefer, you will want to consider the overall size of the unit to make sure it will fit on your countertop. Also, since the vast majority of charbroilers are gas powered, you will need to specify whether you need the unit configured for natural gas or liquid propane. You will also want to check the inlet size to be sure it can be hooked into your kitchen’s main gas line, and you will need to make sure that you have the correct hoses and couplings for installation.
