The power source indicates how the steam is created. Electric and gas models use burners or heat elements to heat up a boiler, or steam generator. Be sure to check the voltage and phase configuration on electrical models. The units come pre-configured with one voltage, but additional options are usually available. For gas-powered units, you will want to verify that the inlet size can be easily attached to the kitchen’s main gas line. Kitchens located in buildings with central steam lines should opt for a model that is powered by steam coils. Rather than a gas or electric burner, the unit connects directly to the building’s steam supply. That steam is used to heat the water in the reservoir or boiler. If the steam is considered food safe, restaurants can use a direct steam model that building’s steam directly into the cabinet.
Convection steamers are able to hold a number of full-size (12” x 20” x 2”) hotel pans. The amount of pans needed depends on how much food you will be steaming at once. One and two compartment models are available as well to fit these differing capacity needs.
