Whereas range-top or full-size griddles are typically found as part of a battery of cooking equipment that makes up the cooking line of a large restaurant, countertop griddles are best suited for kitchens that have a limited amount of space but want to make a variety of cooked items on a single, flat cooking surface. In fact, they can be used to cook anything the full-size units can, including pancakes and eggs for breakfast or burgers, fajitas and even steaks for lunch and dinner. To pick the best griddle for your establishment, you will first need to decide how much space you have available as well as whether you want a mode that is powered by gas or electricity. The overall size of the countertop griddle will determine and/or depend on a few things. First, you have to determine if the model you have selected will actually fit into your current countertop arrangement. If not, you will need to either rearrange the counter or select a shorter model. Also, the overall width will determine how many burners or separate heat zones there are. There is usually one burner (or heat zone) for every twelve inches of length. Each burner will also have a separate control knob allowing you to control the temperature of each zone. This is preferable for creating several items that have a different cook time and temperature.

You will also want to take your kitchen’s current utility hookup into account when selecting a unit. Electrically-powered units almost always require special voltages and their own circuit to function properly, so be sure that you have the correct wiring and enough room in your breaker box or electrical panel. Gas models will need a special couplings and piping to attach to the main gas line.
