Busboys will generally stack everything that is on the table and needs to be washed into the tub at once. Plates get stacked, silverware goes into the glass cups, and everything else gets dropped in wherever it will fit. In order to get everything in the tub without having it overflow or forcing the busser to make more than one trip, you will want to find the deepest tub that will accommodate your specific needs.
Bus tubs are also used to carry clean plates back out to the table. It is advisable to have different colored tubs, one for dirty dishes one for clean, so employees and customers know that you are not using dirty tubs to transport clean dishes. There are also special cutlery boxes that have four compartments for different types of silverware.
