The number of loaves a bread slicer can process in an hour obviously depends on ideal conditions and there will be a little variance based on how fast the employees can operate the unit. Obviously, the larger the unit, the more bread it can slice in an hour. Larger capacity models usually feature more automated controls to make the process even easier.

Each unit can only handle bread of a certain size, since there are only a certain number of blades. The slice thickness is usually adjustable within a certain range, so you will want to check this range and make sure it contains your ideal slice size.
