When choosing a banquet cabinet, the most important factor to consider is the number of people it must accommodate. Holding cabinets are available with a capacity as small as 72 plates or as large as 200 plates. The plates are kept stacked in the cabinet and can be covered to preserve moisture and better retain heat. Hotels and event centers putting on large-scale banquets for more than 200 people will need to purchase several cabinets, since a banquet cabinet large enough to accommodate more than 200 plates would be too unwieldy than is practical.
Another important consideration with banquet holding cabinets is the number of shelves it has and the temperature at which the plates are kept. If it is crammed too full with plates, the heat distribution will suffer. It is best to only use your banquet cabinet for the number of plates and meals it is designed for.
