Accelerated cooking ovens utilize microwave technology that heats foods from the inside out. In addition, forced heat, or impingement, maintains constant, even jets of hot air throughout the cabinet surface. Units that use convection technology also circulate that hot air throughout the cabinet, a method that removes layers of cold air from the food, further increasing cooking speed.
Finally, all accelerated cookers have a catalytic converter in the back of the unit. The converter acts as a grease and smoke filter which removes most of the fumes and emissions from the unit. For this reason, accelerated cooking ovens usually do not have to be placed under a vent hood.
