Restaurants use water mixed with a chemical sanitizer to kill harmful microorganisms on all food contact surfaces. It is important that chemical concentration and water temperature be at the appropriate levels in order to ensure sanitization. If the sanitizer level is too high, the washed surface can become toxic and poison any food it contacts. If the sanitizer is not strong enough, harmful bacteria will thrive and pose a health risk to both restaurant patrons and employees. Water temperature is just as important as sanitizer level because most chemical sanitizers require water temperatures to be around 70 °F to function effectively.
To assure that sanitizer levels and water temperature are correct, San Jamar has developed the Saf-Check all-in-one test system. This systems allows you to keep sanitizer test strips (either Chlorine or Ammonia test strips) along with probe thermometer all in one place. The system also includes a color chart to indicate if sanitizer levels are correct.
