One of the surest methods to reduce the risk of dangerous bacteria reproducing in foods is to minimize the food’s time in the temperature Danger Zone (40 to 140 °F). This can be achieved by efficient heating and cooling methods. For leftovers, it is important that the food reach below 40 °F within four hours. This can be achieved by using either a blast chiller or by using a San Jamar Rapi-Kool Paddle. By cooling food from the inside out, the Rapi-Kool paddle provides a more even cooling method than either a blast chiller or refrigerator alone. This allows for more efficient cooling. The Rapi-Kool is designed for use with soups, stews, chili and other foods that are easy to stir.

Using the Rapi-Kool Paddle

  1. Place Rapi-Kool in freezer. Fill the paddle with either ice or water and place it in the freezer until needed.
  2. Transfer leftovers into a clean container. Transfer hot leftovers into a clean container to help facilitate rapid cooling and to ensure employees do not burn their hands while handling the pot.
  3. Immerse paddle in food and stir for three minutes. Be sure to immerse the paddle and stir slowly to eliminate spills.
  4. Leave paddle in pot and place in refrigerator. After stirring for three minutes, place the pot, with the paddle still inside, in the refrigerator to continue cooling the food.
  5. Stir every 20 minutes. Stirring the food facilitates rapid cooling. Check the temperature with a probe thermometer2016 to monitor how fast it is cooling.
  6. Remove paddle from food. After the food temperature is below 40 °F, remove the paddle and either cover the food or transfer it into smaller storage containers.
  7. Wash and sanitize paddle. The water inside the paddle does not have to be emptied after each use. Simply wash and sanitize the outside and place the paddle back in the freezer.
