Commercial food slicers are a source of both cross-contamination and cross-contact. They are used to slice meat products that can cause foodborne illnesses and are also used to slice deli cheeses that can cause an allergic reaction. When changing slicing duties or if the slicer has not been used for at least two hours, it is important to sanitize the blade and all food contact surfaces to remove any harmful bacteria or stray food proteins that may cause a health emergency.
Rather than totally dismantling the slicer to clean both sides of the blade, San Jamar offers the innovative Blade Runner sponge. Each sponge is soaked in quaternary ammonia sanitizer that will effectively kill all bacteria on both sides of the blade. No slicer disassembly is necessary. Simply slice through the sponge and let the slicer clean itself.
- Remove any large pieces of food from slicer.
- Remove Blade Runner Sponge from its plastic wrapper. Be careful not to squeeze the sponge, since doing so will wring out the sanitizer.
- Turn the slicer off, and set the blade gap to ¾”.
- Place the Blade Runner in the machine carriage and turn on the slicer, and turn slicer in manual slicing mode.
- Manually slice halfway into the sponge and allow slicer to run for 20 seconds.
- Turn off slicer and back Blade Runner away from the blade.
- Reset the gap to ¼” and slowly cut the sponge into five pieces.
- Turn off slicer and wait 60 seconds for blade to dry.
- Use Blade Runner pieces to clean all other food contact surfaces on the slicer.
- Discard sponge pieces. Each sponge is for a single use only.
- Odorless, tasteless sanitizer that dries in 60 seconds.
