R134A
A non-ozone depleting refrigerant used primarily in refrigerators.

RS 232
A standard computer code that links two different systems together. Used on combi-ovens to control them by an external computer.

R404A
A non-ozone depleting refrigerant used primarily in freezers.

Radial fin hot top
The radial fin is the circular indention that goes around the hot top on a range.

Radiant heat
In radiant heat, the source of the heat is an object, not the air itself. The object, in turn heats up its surroundings.

Rear oil return
Component of built-in filters that returns oil to fry pot after being cleansed.

Remote condenser
Installed outside the building so heat produced by a refrigeration process is not released inside, reducing building noise and strain on air conditioning units.

Rethermalizing
Reheating chilled food to appropriate serving temperatures.

Reversible pump
Component of portable filters that returns cleansed oil to fry pot.

Ribbon type heating elements
Heating elements in electric fryers shaped in back and forth curves, resulting in increased surface area for more even heating of oil.

Rotating heating elements
Heating elements in electric high efficiency fryers that turn to maximize even heating of oil and temperature stability.

Roto-molded plastic
A plastic forming process where heated plastic is placed in a mold which is rotated until the plastic coats the entire inside of a mold’s surface. Also called Rotocast plastic.
