Dishwashing operations that use either a pass-through or conveyor machine can place special tables at both ends of the machine to give employees an easy place to load and unload dishes. In case the machine fails, all health departments require that there be a three-bowl sink on hand as a backup. The health department also requires that several sinks be easily available for employee hand washing.
