For the perfect egg cup presentation, place the shelled, boiled egg vertically in the cup. Open the top fifth of the egg with a knife and pull away the top part of the shell. Place a small specialty or demitasse spoon beside the egg cup so customers can eat the egg from the top. Leaving the bottom part of the shell in tact will allow the shell to serve as a container for the soft-boiled insides of the egg. Traditionally, egg cups are made of porcelain, but stainless steel egg cups are a convenient alternative.
