This knife has a hand sharpened and honed steel blade and hardwood handle. Considered the most versatile knife of a Chinese kitchen, the Chinese cleaver can be used for cutting and tenderizing meat as well as smashing garlic and ginger.
This was a replacement for one we got from Japan in 1975 that recently broke. This knife is a little heavier than that one, but it's not so heavy that it impedes usage. The blade material is superior to that one - it's a different grade which is much more rust resistant. Also, Dexter-Russell has a reputation for good quality and the actual product bears that out.
Great Product and fast shipping! Good: Easy to maintain. Light weight. Good Balance. One knife for all kinds of work. Great quality. Bad: The handle design is really old and uncomfortable. It needs to be redesign. Hope it will be dishwasher safe in the future.
