Rated 4 out of 5 by from This was a replacement for one we got from Japan in 1975 that recently broke. This knife is a little heavier than that one, but it's not so heavy that it impedes usage. The blade material is superior to that one - it's a different grade which is much more rust resistant. Also, Dexter-Russell has a reputation for good quality and the actual product bears that out.

Rated 4 out of 5 by from Great Product and fast shipping! Good: Easy to maintain. Light weight. Good Balance. One knife for all kinds of work. Great quality. Bad: The handle design is really old and uncomfortable. It needs to be redesign. Hope it will be dishwasher safe in the future.

Rated 5 out of 5 by from Super sharp edge I've had this knife for a while and it still performs like when I first received it. I use it all the time and haven't had to sharpen it yet. I wash and wipe the blade dry after each use to maintain the shiny finish.

The Dexter-Russell (5178) - 8" Chinese Chef's Knife - Traditional™ Series has a beechwood handle and the blade is high carbon steel. The Dexter-Russell (S5198) - 8" Chinese Chef's Knife - Traditional™ Series has a walnut handle and stain-free high carbon steel blade, making it a little higher in quality.
