The traditional Japanese chef’s knife, known as a santoku knife, is as versatile as its western counterpart. This 6 ½” Santoku Knife – Basics® Series (P47003) from Dexter-Russell is made in Japan from high quality materials. The stain free high carbon steel blade is exceptionally durable and has excellent edge retention. A slight curve in the blade allows this knife to achieve an easy rocking motion that is excellent for chopping vegetables. The hardwood handle gives this knife the look and feel of traditional Japanese cutlery.

I didn't pay much for this knife, so I didn't expect it to be great. For the price, it works. It does not hold an edge, as you'd expect for its price, but if you have a sharpening stone nearby, it works in a pinch. I anticipate it will last less than a year.
