One thing a lot of delis do is put together meat, cheese or sandwich platters for customers that are in a rush and just want a premade meat tray. This is seen mainly in the deli section of a grocery store, but smaller establishments can do it as well. Typically, deli trays have several different compartments for separating different food items. They are also made of durable plastic, so they can survive the trip to a customer’s house. The plastic should be recyclable, though, so you may want to encourage your customers to recycle the trays themselves or bring them in for you to recycle. Also, be sure to acquire matching lids for the deli trays to keep the food fresh and protected.
