Espresso Brew Pitchers

Very commonly in coffee shops, espresso shots are not extracted directed into the serving cup. They are pulled into small metal pitchers, called brew pitchers. These pitchers look very much like a creamer pitcher. They can also be pulled into a shot glass that is specially designed to hold and measure espresso. Choosing between a metal brew pitcher and a plastic brew shot glass is really up to you. The benefit of using a metal pitcher is that the heat will remain in the drink for slightly longer. It is also much easier to warm a metal pitcher before brewing than it is to warm a plastic shot glass.

Using a shot glass is good if you are training a new barista. If your espresso machine is calibrated correctly, the shot size should be the same all the time. Your new barista can learn to tell the difference between a good and bad shot based on how much espresso ends up in the glass. Too little and they have tamped the grounds too tightly. Too much and they need to pack the grounds a little more.
