The champion pot and pan washers use high pressure wash water shot through turbulent spray jets that are designed to blast off baked on food. The units themselves are built of a heavy-gauge stainless steel so they can withstand the beating. You will want to look at how the washer is configured and make sure it will accommodate your dish room layout. Some of the units are front-loading while others are designed for side-to-side use. All of the machines use hot water to sanitize the pots and pans. The high temperature water also assists in removing food grease.
