The key features to look out for when shopping for a drip tray are the height and the style of the tray. For most establishments, a plain square drip tray that measures about a half-inch to an inch tall are ideal. Keep in mind that your cup clearance will be reduced by the height of the drip tray.

For beverage stations where space is limited and the dispenser is placed on the very edge of the table, go with a model that hangs beneath the table. This will increase your customer’s cup clearance and save room at the buffet table. Place the air pot or dispenser on the upper flat surface of your drip tray to hold it in place at the table.
