When choosing an ice display, look for one that will hold enough ice for your buffet line. Large events generally require a large quantity of ice, so when in doubt, choose the display with the largest capacity. Many caterers choose to put an ice display and beverage station at the end of each buffet, while others may choose to provide all ice and beverages at separate beverage tables. Ice displays can also be used to hold beverages or packaged foods on ice.
Make sure to choose a food-safe ice scoop to go with your ice. If customers have to dip their cups in the container to get the ice for their beverages, their hands are likely to come in contact with the ice, spreading germs quickly. Contrary to popular belief, the ice will not kill the germs immediately.
