If not handled properly it can get contaminated, since the moist and dark conditions of the ice bin are ideal for bacteria growth.

When choosing an ice caddy, the capacity and cover style are the most important considerations. Be sure that your caddy will hold enough ice for the event you are catering. If you will be opening and closing the lid often, consider a sliding or hinged lid, since removable lids can become a hassle if you have to keep lifting it off and putting it back on. Furthermore, a bi-fold lid or half-sliding lid is better for maintaining a cold temperature, since the opening it will only open half of the cover and the other half will continue to keep out the heat.
