The Top-Load Food Pan Carrier is a remarkably durable top-loading food pan carrier from Cambro. This carrier is made from corrosion-resistant, sturdy polyethylene that looks fantastic while standing up to heavy, everyday use. The carrier can accommodate three full size, 2½ inch deep pans, two full size, four-inch deep pans or one full size, six- or eight-inch deep pan. The thick foam insulation and removable, airtight gasket ensure that if the temperature of the contents of the pan starts at 189°F, it will only fall to 175°F after four hours, and for cold foods, if the starting temperature is 33°F, it will only rise to 36.5°F after four hours which is remarkably handy for any caterer.

In the cold upstate NY winter, I routinely put a hotel pan of BBQ chicken, and half pans of baked potatoes and broccoli casserole into the Cambro, drive 60 miles, set up and serve two hours from the time it came from the oven. The food stayed so hot that the chicken somewhat overcooked and fell off the bone, not good for a self-serve buffet. Now, I let everything cool for a few minutes. The Cambro is too good.
