Wood cutting boards are a chef’s favorite because the soft, pliable surface is kind to a knifes blade and the wood is less like to leave an odd flavor on the food being prepared. There is no doubt that cutting boards get a lot of use, so it is incredibly important to care for a wood butcher’s block properly. The first step is to always hand wash the board in mild, soapy water using a soft cloth or sponge. If abrasive cleaning materials such as steel wool are used, they can damage the fine surface of the board.
Never, ever leave a cutting board to soak in water. The wood will soak up the water slowly, like a sponge, causing the wood to become warped and uneven and increasing the hiding places for food borne bacteria in the cutting surface. To protect your butcher’s block from warping too easily, rub a good coat of mineral oils all over the board when you first get it. This will help to seal the wood and protect it somewhat from warping. Repeat the process fairly regularly and always leave your cutting boar to dry standing upright.
