Cast iron, iron, steel and carbon steel woks develop a thick, black patina over time. That patina, also known as the seasoning, serves as a non-stick cooking surface and also imparts a unique flavor to any dish cooked in the pan. However, to maintain the patina these woks should never be put in the dishwasher.
