The Half-Size Plastic Docker (DD5274) is a plastic wheel dough docker with a plastic handle expertly manufactured by American Metalcraft.  Dough dockers are tools used by bakers to help eliminate any possible air pockets that might build up from kneading dough.  When baked, the air pockets hidden inside the dough expand due to the heat of the oven and cause large bubbles to form that can ruin the product being baked.  However, thoroughly using a dough docker prior baking significantly reduces the formation of bubbles.  The docker's plastic wheels rotate around a durable, stainless steel axle and make the docker gentler on dough.  The reduced size of the docker makes it ideal for smaller sizes of dough.
