Sharpening steels are used to simply hone and maintain the blade edge. If the blade becomes folded over, you will need to reshape it with one of our sharpening stones. Whether honing or reshaping the blade, it is important to hold the knife at a 20° angle and move it along the steel or stone in smooth, even strokes.
