A restaurant can never have too many plates. From dinner plates to appetizer plates to dessert plates, having extras is always a good idea. Plates can easily be chipped or broken, and once this happens they are permanently out of commission. This restaurant has lower shelving built against the countertop of the expeditor station for easy access to clean new plates should the need arise.
