A mandarin strainer sits atop a metal bowl in an Asian restaurant kitchen. Mandarin strainers are ubiquitous items found in a wide variety of Asian restaurants or home kitchens. The strainer can be used for straining broths, soups or sauces like the one pictured on the right. It has large holes so the straining is not ultra-fine. It can also be used to lift large items, such as whole birds, out of oil or hot boiling water. In a pinch, it can also be used as a skimmer.
