This BBQ pork was cooked and pulled ahead of time by a BBQ chef that is catering at a BBQ competition in Dillon, Colorado. The pulled pork is kept in a hot food table to keep it warm throughout the day. A food pan lid usually rests on top of the pan to hold in the steam and warmth.
