Turning chicken on an outdoor grill

A BBQ chef turns chicken on an outdoor grill at a BBQ festival. Disposable gloves are used to keep the grilling sanitary. He uses utility tongs to turn the chicken, rather than a fork. Using a fork to turn meat on a grill will penetrate to the center of the meat and allow the juices to escape. This chef uses a combination of plum wood, apple wood and charcoal to smoke his meat.
