The lighter patches of color on the top of this cup of coffee are not cream or sugar, but the natural oils that coffee contains. Most processes of drip brewing coffee remove these oils, so that most drinkers are not accustomed to seeing the oil in their coffee. This oil gives coffee a very rich, full texture.
